Happy Easter!

Happy Easter and Happy Spring, I might add.

We celebrated Easter with some friends at our place.  We had a great Easter dinner and I successfully prepared leg of lamb for my first time ever! It was a great success and I am no longer afraid.  For some reason I had this mental block about preparing lamb and thought it was going to be this big challenge, but turns out roasting a leg of lamb was easier than roasting a chicken.

Our Easter menu went a little something like this:

goat cheese souffles with watercress and frisee salad
leg of lamb with mint pesto and roasted potatoes and carrots
asparagus with walnut chive vinagrette

lemon layer cake with lemon curd and mascarpone

Everything was great and I had so much fun cooking with my lady friends while the guys dyed Easter eggs with the little boys and played in the backyard.

Speaking of the backyard, time to start gearing up to plant our garden!  I've pretty much planned out what I want in it, now it is just figuring out where I am going to make the actual garden plot.  I also finished painting the living room so now the next project is the dining room.

My first day of class is this week.  Intro to biostatistics.  Should be interesting.  I'm not "official" quite yet, I still have to take the GRE this Saturday, but if I get accepted into the program this class will count towards my masters so I figured may as well start now.

I was wondering what your Ham alternative protien would be for Easter.

I love cooking Lamb, it makes me feel fancy and it's not that hard.
